Strengthens gluten network, improves gas retention and loaf volume. Typical dosage: 10–200 ppm in flour-based products. Acts as oxidising agent in wheat flour.
Antioxidant and colour fixative in cured and processed meats. Used alongside sodium nitrite to prevent metmyoglobin formation and oxidative rancidity.
Vitamin C fortification and oxygen scavenging in fruit juices, RTD beverages, sports drinks and functional water. Stabilises colour in clear beverages.
